I have this sign in my kitchen – BACON MAKES ME HAPPY. Life is too short. My philosophy, “I eat a little bit of everything and not a lot of any one thing.” It’s a take on celebrity chef Giada De Laurentiis quote.
Have you ever wondered why the USA is the most unhealthy, overmedicated, depressed country? It’s not rocket science. We eat artificial ingredients, use pesticides on our landscape for “beauty” and consume “low fat” because we think it’s healthier but it’s not … it’s full of artificial ingredients your body doesn’t process.
So every bite you take of a low fat item you think the next bite is going to get better and it never does so you end up eating more. It’s a very easy concept to understand. It’s why most people who eat low fat are very overweight and unhealthy. Yet look at how the Europeans savor their meals for hours (stress and fast foods are killing people) and eat fresh food daily purchased from the market including bacon.
But low fat and being sick are cash cows for the pharmaceutical, grocery, hospitals. Being well doesn’t pay. Don’t kid yourself.
So in October 2021 when I escaped the rat race to nowhere and moved to Maine to live off my farm I embraced health. I proudly eat bacon, put organic local dairy farm whipping cream and my own maple tree syrup in my coffee. I plan on going fat and happy.
